Step 01

Preheat the oven to 150C/300F.

Step 02

In a greased 23cm springform pan, spread a third of the brownie batter on the bottom, lay the chocolate cheesecake in the centre then spread the rest of the batter on top. Set aside.

Step 03

In another greased springform pan, spread a third of the red velvet batter on the bottom, lay one vanilla cheesecake on top then cover with the rest of the batter. Set aside.

Step 04

In the third pan, press a third of the cookie dough evenly on the bottom and another third around the sides to make a wall. Lay the remaining vanilla cheesecake in the centre then cover with the rest of the dough and seal the edges.

Step 05

Bake all 3 filled cakes for 2 hours until a toothpick inserted in the centre of each comes out clean.

Step 06

Chill the cakes overnight in the refrigerator then remove from the pans once fully cooled.

Step 07

Dollop a bit of frosting/icing onto a serving platter and line the sides with baking paper.

Step 08

Add the cookie cake to the platter and spread the top with a layer of frosting/icing.

Step 09

Stack the brownie cake on top and spread with another layer of frosting/icing then place the red velvet cake on top and frost the top and sides evenly.

Step 10

Pour the ganache into a squeeze bottle and work your way around the top edge to make a drip pattern, then squeeze more ganache over the top and spread evenly to cover.

Step 11

Press the chopped chocolate into the lower sides of the cake to decorate.

Step 12

Slice, serve and enjoy!
