Preparation Lab

Step 01

Preheat the oven to 180C/350F. Line a 23cm square pan with baking paper and grease with nonstick cooking spray.

Step 02

Combine the cake mix, water, eggs and oil in a large bowl then pour into the pan and bake for 30 minutes until a toothpick comes out clean. Cool completely, 30-40 minutes.

Step 03

Crumble the cooled cake into a large bowl with your hands then add the frosting/icing and mix until it resembles cookie dough.

Step 04

Roll the mixture into 4cm balls, shape each into an egg and place on a lined baking sheet. Freeze for 15 minutes until well chilled.

Step 05

Melt the white chocolate chips with the coconut oil in a shallow microwave-safe bowl in 30-second bursts, stirring between, until smooth.

Step 06

Dip the chilled truffles one at a time into the melted chocolate, return to the baking sheet and sprinkle with the reserved sprinkles before the coating sets.

Step 07

Chill in the fridge until the chocolate has completely set then enjoy!
