Step 01
Bring the apple cider to a boil over a medium-high heat. Reduce down to ½ cup (120ml), this takes about 20-25 minutes.
Step 02
Pour into a large glass measuring cup. Add the butter to the hot cider and stir to melt. Set aside to cool.
Step 03
In a large bowl, whisk together the eggs with the white and brown sugar. Add the cooled cider and butter mixture, sour cream and vanilla extract.
Step 04
Sift the flour, baking powder, salt, cinnamon and nutmeg into the wet ingredients.
Step 05
Using a wooden spoon, mix the dry ingredients into the wet until just incorporated.
Step 06
Cover and chill for 1 hour.
Step 07
On a very well-floured surface, roll out the cooled dough to about ¾-inch (2cm) thickness and cut into doughnut shapes using pastry cutters or a mason jar and a bottle cap. Chill the cut doughnuts for 10 minutes more if necessary.
Step 08
Heat the oil to 180C/350F.
Step 09
Fry the doughnuts, 3-4 at a time, flipping occasionally until golden on both sides.
Step 10
Remove to a paper towel lined baking sheet to drain. Roll in cinnamon sugar while still warm and enjoy.
