Preparation Lab

Step 01

Combine the chicken with the garam masala, salt, grated garlic, ginger, and lemon juice in a mixing bowl. Cover and refrigerate for at least 2 hours, or overnight if possible.

Step 02

Heat the oil in a large frying pan until hot. Add the sliced onions and peppers and fry for 5-6 minutes, stirring occasionally, until softened.

Step 03

Add three-quarters of the chilli and cook for 2 minutes, then add the marinated chicken and its marinade. Cook for 3-4 minutes.

Step 04

Stir in the tomato purée and cook for 2 minutes. Pour in the stock, bring to the boil, then cook for 10 minutes until the chicken is cooked through.

Step 05

Meanwhile, combine the cachumba salad ingredients — tomatoes, cucumber, red onion, chilli, lime juice and zest, coriander, and salt — in a bowl. Season to taste and set aside.

Step 06

Add the tomato strips to the curry, stir through, and cook for 5-10 minutes until the sauce thickens and the tomatoes soften.

Step 07

Taste and adjust the seasoning, then remove from the heat. Garnish with chopped coriander and the remaining chilli, and serve with rice and the cachumba salad.
